Vegan Organic Mixed Quinoa Soup With Cabbage

Ingredients: serves 4 to 6

! big onion, pealed and chopped

2 carrots, pealed and cut in small cubes

2 celery , cut in small pieces

4 cloves of garlic, pealed and crushed

4 bay leaves

1 tsp of salt

1/4 black pepper

2 cups and half chopped white cabbage

2 cups of cooked mixed quinoa, seasoned with salt pepper ( black, red, white )

3 tbs of organic olive oil

5 cups of water

2 carrots, pealed and julienne for the garnish

few fresh leaves of cabbages

In a soup pot add olive oil,  onions, crushed garlic and cook for few minutes than add, carrots, celery and  water , bring to a boil and let it simmer for 30 minutes.At the main time in another pot , add 1 cup of mixed quinoa, salt  and 2 cups of water, bring to a boil and simmer for 15 minutes set aside . Add the chopped cabbage on the soup, and cook another 15 minutes.

Than when the soup is cooked, add 1 cup and half of the cooked quinoa, mix  all together.

In a bowl , scoop the soup and garnish with julienne carrots and a leaf of fresh cabbage.
