Yesterday i was thinking about what i call it the forgotten vegetable, it’s called celery.So, few years ago this is based on true story i used to work for a client who wanted to change his diet and achieve his ideal weight. I met a house manager who used to work for him and we became friends .One day , we were chatting about our lives experiences, kids, traveling, etc.. and she was complaining about how it was hard for her as a mother of 2 kids to learn more about healthy cooking and didn’t have any information about what to eat and make some changes on her diet. Also the reason for the change is to help her son who was overweight, she wanted to be the first to do it in the family. I started helping her to change her diet and asked her if she is willing to add this vegetable as a snack on daily basis.So when she felt hungry, she ate celery. Few month later, adding celery on her diet , everyday as a snack she lost 40 pounds.I wanted to share this story with all of you to think again about this vegetable.
I was at the market, than the picture came out on my mind i should make a recipe about this vegetable.
Organic Celery Soup With Idaho Potato
The potato is an option, the reason i added it for parents who have problems feeding their kids vegetables. This the best way to make any vegetable soup and add a potato.
Vegan Organic Celery Soup With Idaho Potato
Ingredients: serves 4 to 6
1 bunch organic celery, cleaned and cut into chunks
2 cups of chopped onions
3 cloves of garlic, pealed
2 tbs of organic olive oil
1 tsp of Celtic sea salt
Half of 1/4 of white pepper
5 cups of water
1 Idaho potato, pealed and cut into small cubes
1 small red onion, pealed and sliced ( this an option for presentation )
In a soup pat add onions, garlic with 2 tbs of olive oil and cook for few minutes.Add water, celery, salt and pepper, bring to a boil than simmer for 20 minutes.In a blender puree the celery soup and return it back to the stove, add the potato and cook for another 20 minutes.
In 400 f oven roast the sliced red onions with some olive oil, salt pepper until they turn brown.
In a soup bowl, scoop the celery soup and garnish with roasted onions and celery leaf.
