Vegan Idaho Potato Soup With Kale

Ingredients: serves 6

4 cups of Idaho potatoes, pealed and cut in cubes

1 bunch of kale, washed and chopped

1 big and half onions, pealed and cut in chunks

2 tsp of salt

1.4 tsp of white pepper

This is an option you have an extra Idaho potato, pealed and shaped for garnish with  julienne Kale stems

5 cloves of garlic , pealed

3 tbs of olive oil

5 cups of water

In a soup pan add olive oil and saute the onions with garlic for few minutes without browning it, than add water bring to a boil , let it simmer for 25 minutes.

the trick for this soup before adding the potatoes and kale, puree the onions-garlic with a little bit of water than add the rest of the ingredients. Cook for another 25 minutes

This is an option, you can shape the rest of the Idaho potato at any shape you like  as  flowers, hearts, animals etc.. and roast in a 400 f oven with olive oil, seasoned with salt and pepper

Also take a kale stems and peel them, than saute with olive oil, salt, pepper( this is an option )

in soup bowl scoop the soup and garnish with roasted potatoes and  saute kale
