Vegan Celeriac Soup With Shiitake Mushroom And Radish Sprouts

              Ingredients: serves 4 to 6

             850 g of Celeriac, pealed and cut into  chunks

             1 big onion, pealed and cut into  chunks

             4 cloves of garlic

             1/2 box of radish sprouts, 1.25 OZ or 35 g

             7 OZ of shiitake mushrooms, cleaned and sliced

             1 tsp of Celtic sea salt

             1/2 of a quart of tsp white pepper

              5 cups of water

              2 tbs of olive oil

     In a soup pot add olive oil, onions, garlic and cook until they turn brown. Add water, celeriac, salt, pepper , bring to a boil than simmer for 35 minutes.   In a blender , puree the soup than return to it to the  pot, add the shiitake mushrooms and cook for another 10 to 15 min on very low flame.

I a soup bowl , scoop  the soup and garnish with saute shiitake mushrooms and few radish sprouts.
