Shrimp Salad with balsamic vinaigrette

This is a great salad for the evening when you come home from work or the gym. It could be made day before and you just have to make your vinaigrette as lemon-olive oil -salt and pepperServes 4

6tbsp olive oil for the vinaigrette and few tbsp for cooking the shrimp

3 tbsp balsamic vinegar

1 medium cucumber, peeled and cut in cubes

1/2 small red onion, cut in small pieces

2 cloves garlic, crushed

1lb medium shrimp

2 tsp fresh chives

2 tsp fresh parsley

4 leaves radicchio for garnish

1. Vinaigrette: Mix 6 tbsp olive oil,balsamic vinegar, salt, and pepper. In a mixing bowl, combine the cucumber, chives, and red onion with half of the vinaigrette.

2.In a baking sheet combine the shrimp with olive oil, season with salt, and pepper to taste and bake for 12 to 15 min in a 400 f.  Transfer to a bowl and add parsley, set aside.

3.Arrange four plates with radicchio leaves in the center. Divide the cucumber salad into the radicchio cups, and top with cooked shrimp. Drizzle with remaining vinaigrette.
