It’s nice to add on day a week for  dinner  a dish with  vegetables and some plant protein. You can use any kind  of  vegetables you find at home,  toast them with some olive oil, salt and pepper.If you have any beans add them to the vegetables mixture . This the ingredients i found that day and made this recipe and wanted to share it with you.

Roasted Vegetables With Mung Beans and Parsley oil
In a 400 f hot  oven , roast your vegetables, make sure every vegetable should be cooked separately because some need more time to be done.
What i had as ingredients: tomato , onion , mixed bell peppers,potato, asparagus, mung beans, olive oil, salt and pepper.
