Roasted Potato With Shitaki Mushroom, Tomato, Basil and Dill Pesto


The most eaten vegetable on earth is called “Potato”, Today, hundreds of varieties of this popular vegetable are grown around the world.In America , the potato can be divided into four basic categories: russet, long white, round white and round red.Potatoes are very good for you , 6-ounce potato contains only about 120 calories and they are low in sodium, high in potassium and an important source of complex carbohydrates and vitamin C and B-6, as well as a store house of minerals.If you want to loose weight it’s a great vegetable to add as the potato itself is 99.9% fat free.
You can bake it and have it with plain fat free yogurt, or Cottage cheese.Also what i like about the potatoes you can add a pesto made with basil, fresh garlic, salt pepper, walnut, olive oil.WE can also make arugula pesto( arugula, salt, pepper, olive oil, cashews, fresh garlic). In this recipe i made this week used fresh basil, fresh dill, garlic, olive oil, walnut, pepper, salt.
The potatoes could be used on eggs in the morning with onion and mushrooms, fresh thyme and serve them with green salad and some berries.For mashed potatoes, you can boil them and add olive oil, salt, pepper vegetable stock. Also you can make them as a stew with onion, garlic, potatoes, tomatoes, mixed peppers, fresh thyme, olive oil, water,, pepper,white beans, bay leaves, green olives.i make them with almond milk hemp milk, hazel nut milk or any non dairy milk you like and roasted garlic and finish them with fresh mixed herbs ( thyme, tarragon, chives).
