Roasted Potato With Feta Cheese And Parsley Oil

This dish could be done with Goat Cheese or light Mozzarella  cheese. As the potatoes you can use: russet, round red, all purpose.

serves 4

3 medium all purpose potatoes, peeled and sliced 1/4 inch thick

2 large carrots , peeled and sliced 1/4 inch thick

1 medium red onion, thinly sliced

1/4 cup extra virgin olive oil

1/4 of bunch parsley, washed

1/4 lb feta cheese, thinly sliced

Fresh oregano for garnish

1. Heat oven to 400F. In a different baking pan spread the sliced potatoes , carrots, onion with olive oi l, season with salt and pepper and roast until tender. Cool

2. In a blender puree together the parsley and remaining olive oil until smooth; strain. In a roasting pan , make potato -vegetable stacks by layering potatoes, carrots, onions bake for 10 min. In a clean plate put one potatoes- vegetables stack and a slice of feta cheese on top. Drizzle with the parsley oil, and a piece of oregano for garnish
