Organic Raw Vegetables With Balsamic Lemon Vinaigrette


Why raw vegetables and fruits are good for all of us .The summer is coming and this is the best season of the year to add them and enjoy all the freshness .So from DR Joel Fuhrman point of view and his book on “Eat To Live” points out that: interestingly , there is one food that scientific research has shown has a strong positive association with increased longevity in humans. So which food do you think that is ?
The answer is raw, leafy greens, normally referred to as salad. Leafy greens such romaine lettuce, kale, collards, Swiss chard, and spinach are the most nutrient-dense of all foods.
Most vegetables contain more nutrients per calorie than any other food and are rich in all necessary amino acids. For example , romaine lettuce, which gets 18 percent of its calories from fat and almost 50 percent of its calories from protein, is a rich powerhouse with hundreds of cancer-fighting phytonutrients that protect us from a variety of threatening illness. Being healthy and owning a disease resistant body is not luck; it is earned.
It’s easy to make fresh salads every day :you can use bock choy, romaine lettuce, mache, escarole curly endive, Boston lettuce, looseleaf lettuce, iceberg lettuce, kale, spinach, cabbage, arugula etc..Then add avocado , seeds as ( flax seed, chia seed, pumpkin seed, sunflower seed), nuts, any raw vegetables you like, olive oil, walnut oil, avocado oil, lemon, lime, fruits as berries, pear, apple etc…onion, scallion, chives..add some raw cheese.
you can have it with organic chicken breast, red meat if you like, fish or legumes etc.. They are so many combination you can play with when it comes to fruits, greens and vegetables.The best think is to go to the farmers market and discover new fresh products of the season.Many times farmers will tell you exactly how to use any vegetables, herbs, fruits they sell.
