Organic Polanta With Arugula, Roasted Garlic, Yellow Cherry Tomato and Parmesan Cheese

January 24, 2014 the food subject of today is about “Polenta”

A staple of northern Italy, polenta is a Much made from cornmeal. It can be eaten hot or cooled until firm, cut into any shape. Then you can bake it, saute and serve it as a side dish, appetizer, or in an entree .
i remember many years ago a friend of mine from a region in Italy who used to work at the United nations, told me in Italy the recipe of the polenta is very simple: water, salt, olive oil and cornmeal.
Polenta is sometimes mixed with cheese such as Parmesan or Gorgonzola.You can also have it as breakfast mixed with raisins, pine nuts, honey and any milk you like .
This is what i created as vegetarian dish: you can have it with organic chicken breast, shrimp, turkey breast or Halibut fish.
This is the recipe:
Organic Polenta With Yellow Cherry Tomatoes , Arugula, Parmesan Cheese and Pine Nut:
Ingredients: serves 2
1 cup of organic cornmeal
3 cups of water and more to add at the end
3 tbs shaved Parmesan cheese
salt, black pepper
2 cups of arugula
2 tbs roasted pine nuts
6 tbs Olive oil
12 pieces yellow cherry tomatoes
4 fresh cloves of garlic
2 tbs fresh thyme
In a soup pan add the cornmeal, 2 tbs olive oil, salt and cook for few minutes ,add 1 cup of hot ,water slowly and mix until the cornmeal absorbs the water, add more hot and stir in a low flame.Cook for 20 minutes or 25 minutes.In this recipe for the polenta some people will use chicken stock , also you can use any warm milk as hemp, soy, rice, almond, 1% milk at the end when you finish cooking the cornmeal.
In a saute pan add 2 tbs olive oil, garlic cloves and cook until they turn brown. then turn the flame off and add the arugula and season with salt pepper, set aside.
In a 400 F hot oven and in a baking dish add the yellow cherry tomatoes, 2 tbs olive oil,fresh thyme, salt, black pepper and roast for 15 minutes.
In a dinner plate place one portion of hot polenta , arugula, cherry yellow tomatoes , pine nuts , shaved Parmesan cheese and drizzle with some organic olive oil.
You can serve this also if you are vegetarian with saute broccoli
