They are more salads recipes under this dish and a shake
So, i was thinking to make a special brunch dedicating it to my 2 lovely daughters whom i love without conditions.I would like to share this recipe with every parents who share the same philosophy about love, forgiveness, kindness, support and accepting every situation what happened in the past to make the future full with light.
I call it Brunch : Sarah and Rima Organic Omelette With Organic Raspberry, Micro greens , Tomato Sauce and Parsley Vinaigrette
Ingredients: Serves: 2
8 whole eggs ( 8 egg whites with just 2 yellows)
Salt, pepper, olive oil
4 cloves of garlic, pealed and crushed
5 beef steak tomatoes
11 cup micro greens
12 pieces of organic raspberry
2 frozen organic blackberry
12 pieces of pearl onion, pealed and cut into halves
2 tbs chia seeds
6 pieces of gooseberry, cut into halves
Parsley Vinaigrette: 3 tbs fresh lemon juice, 4 tbs organic olive oil, salt, pepper, 1/2 cup fresh Italian parsley, 3 tbs filtered water. in a blender, add all the ingredients and puree, set aside.
In a sauce pan, add crushed garlic , 2 tbs olive oil cook for few minutes , add the tomatoes and cover for 40 minutes.When is cooked, blend the sauce and season with salt pepper, set aside.
In 400 F hot oven roast the pearl onions with 1 tbs of olive oil, season with salt, pepper for 15 minutes, set aside.
In a mixing bowl, add the egg whites with the yellow, mix and season with salt, pepper.. In a medium hot non stick pan and with 1/2 tsp of olive oil add one portion of the eggs mixture , cook until you see the formation of an omelette, add roasted pearl onions, one part fresh parsley, 1 tbs chia seed and finish the cooking.Continue the same method as the first omelette, set aside.
In a dinner plate, spoon the tomato sauce, add one omelette, micro greens, berries and drizzle with the parsley vinaigrette
Ingredients: serves 2
Watermelon, cut into cubes
1 cup of black beans, 1 cup of white beans
1/4 tsp cinnamon powder
1/4 tsp cumin powder
2 tbs fresh mint, cleaned and chopped
1/2 cucumber, pealed and cut into small cubes
2 scallions, washed and chopped
3 tbs fresh lemon juice
4 tbs organic olive oil
2 tbs pistachio
1 granny Smith apple, pealed and cut into small cubes
Options: you can add fish as skate, striped bass, calamari, scallops In mixing bowl add all the ingredients well together and serve as side dish. If you want to add an animal protein with : saute calamari, scallops with these you can add fresh dill, lime, crushed garlic, salt, pepper,and olive oil. we can also marinate the Skate fish with fresh dill, lime, salt, pepper , olive oil , and bake in a 400 F hot oven for 12 or 15 minutes. For the vegetarian, you can add some cheese i will suggest feta cheese because of the texture with the water melon, the acidity of the apple make this recipe clean and fresh to the palette.
I will add also to it couscous , combination of cinnamon, cumin remind me the trips in North Africa ( Algeria, Tunisia, Morocco )
Preparation of the couscous is very easy: bring water to a boil, tan in a pot add 1 cup of couscous cover it with hot water, add salt, some olive oil, let it sit for 10 to 15 minutes. I always use spoon to mix it and the trick is to use a fork and try pressing down to separate the grain in a very low heat to keep the grain very fluffy.
I call this shake the Momo power electrolyte drink because of the ingredients in this drink.

1 fresh coconut, remove the water from it as you take any heavy metal piece and try to hit it in a way to crack it in the middle . Make sure to have a bowl
Under for any coconut water coming out . You can strain it to make sure no coconut meat is in.
The next ingredient is Acai fruit. You can find it at any heathy store called frozen pure acai fruit without any sugar add to it
1 cleaned frozen ripe banana
1 tbs organic agave syrup
1 tbs raw honey
2 tbs organic coco powder
6 fresh dates, pitted
2 tbs almond butter
1 kiwi, pealed
In a blender add all the ingredients and purée. In a clean tall water glass , fill it up with the Momo power drink .
I found out with this drink you will have so much energy to do 25 minutes cardio, 45 minutes supper sets and one hr power yoga .
1-I was thinking how much the potato salad is loved around the world so I decided to make a recipe for you as a potato salad and as side dish sardines with roasted tomatoes and fresh basil or just make it raw .In our site we try to make dishes very easy to follow as a chef i know at home i like to prepare dishes in less than an hr.
Today, when i went to the market, i bought organic eggs and a very popular potatoes in this country called Russet: they are the most wildly used potato , have thick netted brown skin white flesh.Their low moisture and high starch content make them light and fluffy when cooked.
Russet Potato Salad With organic Hard Boiled Egg and Lime Vinaigrette:
2 cups, Russet potatoes cleaned and cut into cubes
salt, black pepper
2 tbs fresh Italian parsley
3 tbs fresh lime juice
1 tbs white balsamic vinegar
4 tbs of olive oil
2 hard boiled organic eggs with just one yellow
3 tbs scallions, cleaned and chopped
2 tbs dried cranberries
What i like about this recipe is very easy to make.
In a boiling water with 2 separate pots add, the cubed potatoes, and the eggs .You should boil the egg for 13 to 14 minutes, remove,put it under cold water, peal them and chop them , with just one yellow, set aside. Check the potatoes when they are finished, strain them out from the water , set aside.
in a mixing bowl ,add all the ingredients and mix well.
what i like to serve with this dish and remind me back home in North Africa, we used to by fresh sardines during this season and my mother used to clean them, add fresh crushed garlic, salt, black pepper, olive oil and some lemon juice and saute them. I can still taste them but as we say in life we are not here in this earth for ever.May God bless her soul.
I by wild sardines in water than make my own dressing as for 2 people this is the recipe of the sardines salad:
Wild Sardines Salad With Tomato and Black Olives
1 box of wild sardines in water ( 125g )
1 and 1/2 beef steak tomatoes, cut into small cubes
Salt, black pepper
1 tbs fresh lemon juice
10 black olives
2 tbs olive oil
1 tbs copped fresh basil
In a mixing bowl add all the ingredients and mix.
If you want to roast the tomatoes you need to have 1 and 1/2 beef steak tomatoes, cut into 1/4.In a 400 F hot oven and in a baking dish, arrange the tomatoes, 2 crushed cloves of garlic, salt, black pepper, olive oil. Bake for 15 minutes, remove and add fresh basil, and black olives.
In a dinner plate, arrange one portion of the potato-egg salad and on the side ,wild sardines with tomatoes and olives.
