Organic Celery Salad With Chickpea, Golden Sweat Apple, Lavender and Lemon Vinagrette

January 23, 2014 what i was going to talk about this vegetable so many people does not enjoy but when it comes to health is a powerhouse vegetable called “Celery”

Celery is one of the oldest vegetables in recorded history.From John Heinerman a medical anthropologist ,the seeds and the stalks of celery both contain a sedative compound called “phthalide”. In mainland China, celery juice was useful in reducing hypertension in 14 out of 16 patients.The juice was mixed with equal amounts of honey and about 8 tsp.Was taken orally three times each day for up to a week. Make your own celery juice at home with a juicer or by it fresh from a health food store. Mix equal parts of it and carrot juice together and drink an 8 oz. glass once a day to help strengthen frayed nerves and calm you down.
Celery is filling, has few calories and contains many vitamins, minerals and antioxidants. But did you know that the leaves are the most nutritious? According to the March’ 13 Reader’s Digest, it’s the celery leaves that contain the most calcium, iron, potassium, beta-carotene and vitamin C.
So, this is my creation about the celery:
Celery Salad with Chickpea, Apple, lavender and Lemon Vinaigrette:
Ingredients: serves 2
1.1/2 carrots, pealed and sliced very thin
2 celery stalks , cleaned and sliced very thin
1/2 apple (gala), cut into small into cubes and the other half cut into julienne
2 tbs dry lavender, and few fresh leaves for garnish
2 tbs raw sunflower seeds
3/4 cup of cooked chickpeas
Lemon vinaigrette:3 tbs fresh lemon juice, 5 tbs olive oil, salt, black pepper. In a clean bowl, add all the ingredients , mix and set aside.
In a large bowl, add chickpeas, carrots, lavender, apple, sunflower seeds, mix and season with salt, black pepper.
in a dinner plate arrange one portion of the chickpea salad, drizzle with some of the lemon vinaigrette and garnish with the julienne apple and fresh lavender leaf.
What i like about this salad could be served with organic chicken breast ( sliced and marinated with crushed garlic, salt, black pepper, cumin, cinnamon powder, cilantro.In a 400F hot oven and in a baking dish , bake for 15 minutes), calamari ( marinated with, chili pepper, salt, crushed garlic, scallions, olive oil, lime juice.You can saute or bake it in a 400F hot oven ), baked firm tofu(you can add olives, garlic, fresh parsley, black pepper.Mix everything and coat the tofu.then bake on a 400F hot oven for 25 to 30 minutes)
