Organic Amaranth With Mango, Pomegranate , Raw Honey ,Banana Mango Sauce And Pumpkin Seed Oil

 I wanted to share this grain with you as i use it for  breakfast on my routine diet.  It’s a  morning power fuel breakfast,  is  called amaranth. It has a great taste, slightly sweet flavor and can be used on dessert, savory and baking. Amaranth seeds and flour can be found in natural food stores, as well as in many super markets around the States.
Amaranth, i discovered it long time ago with my girlfriend at that time who was diagnosed with an allergy on wheat.I learned from her to add it at my repertoire of healthy cooking.This grain is high in plant protein, calcium, iron, fiber .It has been cultivated in Asia, Africa, South America for Centuries.Instead having oat everyday , you can use this grain as a cereal replacement.
I use it in soups, breakfast in the morning, savory when i make tarts, and desserts.

Organic Amaranth With Pomegranate, Mango Banana Sauce and Pumpkin seed Oil:
Ingredients: serves 2
i cup of cooked amaranth ( in a pot , add 1/2 cup of amaranth grain, 1.1/2 cup of water. Bring to a boil than simmer for 15 to 20 minutes), set aside
1/4 tsp cinnamon powder
2 tbs ground flax seeds
1 banana, half mango( Puree in a blender, set aside )
1/2 banana and 1 tsp raw pumpkin seed for garnish
Few berries of your choices for garnish
Half mango ( take a cookie cutter and make 2 shapes, set aside )
1 tbs pumpkin seed oil
2 tbs raw honey
3 tbs fresh pomegranate seeds , in a mixing bowl, add cooked amaranth, pomegranate seeds, cinnamon powder , and ground flax seed, set aside.
You can plate this dish the way you want as just in bowl , add all the ingredients and drizzle with the sauce, pumpkin seed oil.
For me, i like to use design, to show you any recipe you make , can be presented as a master piece.You just have to learn how colors work together, than the rest is easy. if you take some art classes it will help you to figure it out . In this recipe i used a dinner plate , took a cookie cutter ring , i pressed the amaranth mixture, added a shaped mango, piece of banana, pumpkin seed, one blackberry, one pomegranate seed. I drizzled with the mango-banana sauce and pumpkin seed oil.
