Today i will talk about how watermelon is something to consider adding to your diet beside coconut water as refreshing after any type of exercise you do.
Watermelons are natives to Africa and date back as far as 200 B.C.Because of their high water content , they were used as a source of liquid in areas where water was limited or tainted. Watermelons are available from May to September, but today you can find it at every market in the country.
In an article of a magazine called fitness Rx for men :jun, 2013 they mentioned , watermelon contain an amino acid called citruline.It is an important amino acid that stimulates protein synthesis. It is a popular component in athletic food supplements because it participates in key amino acid reactions. It also inflences blood flow by increasing nitric acid levels. Nitric acid is an important chemical secreted by the endothelium – the inner lining of the blood vessels. Citruline might be beneficial for weight training because the liver does not take them up , so they are available to promote protein synthesis in muscle.
I decided to share different ideas to use watermelon on recipes for drinks, salads, entrees and desserts.

Drink:
ingredients:
1 cup of watermelon, 1 tbs chia seeds,1 banana , 1 kiwi, 1 tbs raw honey, 1 tbs organic cocoa powder.In a blender and high speed, add all the ingredients and puree and serve. if you want this drink as a shake, freeze the banana day before, add some iced frozen watermelon.

Salad:
watermelon salad With Salmon , Watercress and Pomegranate vinaigrette:
Ingredients: serve on
1 cup of water cress, cleaned
salt, black pepper
1/2 cup water melon cut into cubes
1 tbs fresh lemon juice
1 tbs pomegranate vinegar
2 tbs fresh pomegranate seeds
2 tbs olive oil and extra to cook the salmon
1 piece of 5 oz salmon filet
1 tbs fresh chopped mint
1 tbs raw pine nut
1 tbs chopped scallions
In a 400 F hot oven, and in a baking dish add the salmon seasoned with olive oil, salt, black pepper, bake for 15 minutes or until done, set aside. In a clean bowl add , watercress, pine nuts, fresh mint, scallions ,pomegranate seeds, pomegranate vinegar, salt, black pepper, lemon juice , olive oil, mix and set aside.
In a dinner plate, arrange the watermelon,a piece of salmon, the watercress salad and if you want drizzle with some organic extra virgin olive oil.

Entree:
Organic chicken Breast With Water melon And Spinach
Ingredients: serves 2
2 organic chicken breasts of 5 oz each
salt, black pepper
2 tbs fresh chopped parsley
2 garlic cloves, crushed
2 cups of cleaned baby spinach
2 tbs passion fruit vinegar
3 tbs organic extra virgin olive oil
1 cup of watermelon, cut into cubes
2 tbs of raw cashews
2 tbs chopped red onions
In a saute pan, add 2 tbs of olive oil , add the chicken breasts ( seasoned with salt, black pepper, crushed garlic, chopped parsley) , saute until they turn brown on both sides.In a 400 F hot oven and in a baking dish arrange the chicken breasts and bake for 15 minutes or until done, set aside. In a mixing bowl add, baby spinach, cashews, chopped onions, set aside. Make the vinaigrette: in a bowl add, passion fruit vinegar, olive oil, salt, black pepper, mix and set aside.
in a dinner plate: arrange one portion of watermelon, piece of sliced organic chicken breast, baby spinach salad and drizzle with the passion fruit vinaigrette.

Dessert:
Ingredients:
2 cups of water melon puree
Miniature pastry mold
50 oz organic dark chocolate, crushed
1/2 cup raspberry
2 kiwis
1/4 cup fresh green grapes
3 tbs walnuts, crushed
In a pastry mold add, the water melon puree, add some of the crushed chocolate and the walnuts, freeze. In a blender and a in a higher speed puree the kiwis with the grapes, set aside.
In a dessert plate, arrange some raspberries, few frozen watermelons miniatures and drizzle with the kiwi sauce.


Another recipe is to mix different kind of melons as cantaloupe, watermelon, honeydew:
Seafood With Melons, Mache and Lemon-Lime Vinaigrette
Ingredients: serves 2
1.1/2 cup of mixed melons, cut into cubes ( watermelon, cantaloupe, honeydew)
1/2 cup of cubed cucumber
1/2 cup sliced celery
1/2 cup baby scallops
1/2 cup baby shrimp
4 garlic cloves, pealed and crushed
3 tbs fresh chopped cilantro
2 tbs fresh lemon juice
2 tbs fresh lime juice
2 tbs olive oi
4 tbs sesame oil
2 tbs chopped red onions
2 tbs chopped fresh chives
Celtic sea salt, black pepper
1 yellow bell pepper, cleaned and cut into half
1 cup of mache greens
In a 400 F hot oven and in a baking dish add baby shrimp and scallops seasoned with crushed garlic, salt, black pepper, olive oil, cook for 15 minutes, set aside.
In a mixing bowl, add melons, cilantro, salt, black pepper, chives, red onions, sesame seeds, sesame seed oil, lemon juice, lime juice, cucumber, celery, mix set aside.
In a dinner plate, arrange one portion of the seafood, add one half yellow bell pepper stuffed with the cucumber melon salad, garnish with mache and drizzle with sesame oil as an option.
