Composed Salad With Tofu

This is a raw salad thats easy to make! You can use any vegetable and the tofu can be replaced with goat or feta cheese, if you want to. It’s very refreshing and good for people on a diet.

Serves 4:

1/4 cup avocado oil

1 clove garlic, chopped

3 tbsp lemon juice

1/2 pound tofu, drained

2 yellow peppers, halved, seeded

4 heads specialty baby cauliflower, such as purple,(option: if you find a green and white cauliflower)

2 large carrots, julienne

1 daikon radish, julienne

1 apple such as gala, sliced thin

4 reds radishes, sliced

1 cup snow pea or beans sprouts

Balsamic vinegar

Poppy seeds, option for seeds( flax seed, pumpkin seed, hemp seed,chia seed or salba, sunflower seed)

1-Whisk together the avocado oil,garlic and lemon juice; season with salt pepper. Transfer to bowl and set aside.

2-Slice the tofu at any shape you like,than in a dinner white plate set the bell peppers off center , cup-like. Arrange carrots, daikon and cauliflower individually in the peppers. Place the apple and radishes, leaning on the pepper, and make a bed of sprouts beside it.Drizzle with dressing, and garnish with drops of balsamic vinegar and sprinkling with any seeds you choose.
