Chicken Stuffed with Broccoli on Tomato Coulis

This dish could be prepared also if you think it’ s hard for you to stuff the chicken, just saute the chicken with olive oil both sides and finish it in a 400 f oven for 15 minutes. The broccoli could be roasted for 10 minutes (olive oil, salt, pepper)

8 chicken breasts, about 5 oz each

1 head broccoli, roughly chopped

6 tbsp olive oil

1/2 onion, roughly chopped

1 cup diced ripe tomatoes

8 heads assorted baby cauliflower varieties, or 1 head of regular cauliflower, broken into small  florets

1-In a food processors, puree the broccoli. Heat half of the olive oil in a skillet, and saute the broccoli puree for 1 minute; season with salt and pepper, let cool. Use the tip of a knife to cut a pocket into the side of a chicken breast, being careful not to cut all the way through. Stuff chicken breast with the broccoli puree.

2- Make the tomato coulis: Saute the onion in 2 tbsp olive oil until soft. Stir in the tomatoes; cook until tender, season with salt and pepper. Puree in a blender than strain.

3-Heat oven 400 F. Sear the chicken breast in a hot skillet with the remaining olive oil. Transfer the chicken to a roasting sheet pan add the cauliflower and bake for 12 to 15 minutes. Slice the stuffed chicken breast , in white dinner plate,  place the tomato coulis, cauliflower florets and the chicken on the top.
