Today i will share with you about some of us think about mushrooms are just for garnishes on our salads, soups, entrees , tarts etc..
From Dr Joel Fuhrman, M.D. and on his book called How to live for life (the End of Dieting), Mushrooms specialized lectins (called antigen-binding lectins) can recognize and bind to abnormal cells and cancer cells, labeling the cell for destruction by immune system, while its compounds also prevent abnormal cells from dividing and replicating. Mushroom phytochemicals also enhance the activity of natural killer cells, that is, specialized immune cells that attack and destroy virus-infected and cancerous cells.
Mushrooms also contain powerful antiogenesis inhibitors. All types of mushrooms have a wide variety of anticancer effects against stomach, colorectal, and prostate cancers as well..Because angiogenesis is also required for the growth of fat cells, mushrooms oppose fat deposition on the body while simultaneously working against the growth of cancer cells.
Mushrooms also block enzymes that break down carbohydrates into simple sugars, which allows the body to maintain lower sugar surges in the blood when it’s breaking down foods that contain carbohydrates.Mushrooms are even better than probiotics at increasing the diversity of healthy bacteria inside the gut. Mushrooms also foster resistance against pathogenic bacteria such as salmonella and Clostridium difficile. Furthermore , they increase salivary and mucosal immunoglobulin A, which further increases resistance to bowel infection and inflammation.
I hope this information will help you to be more creative when you use mushrooms on your dishes.One of the mushroom i used in this recipe is called”Enoki” are mushrooms cultivated Japanese variety that grow in small fragile clusters of white stems topped by tiny caps. They have a mild, light flavor with a slight crunch. They are usually eaten raw in salads or used as a garnish.
You can also cook them and add them with different variety of mushrooms as chanterelle, cremini,hedgehog, lobster, maitake, matsutake, morels, white etc.. on casseroles , stews and what ever you chose to include them . Ingredients: salmon filet, fresh parsley, enoki mushroom, parsnip, salt, black pepper, cumin powder, cinnamon powder, fresh lemon, garlic,onion, olive oil, watercress, pine nuts, edible flowers.
with this ingredients you can make anything you want just be creative.
